I recently followed the journey of Columbus’ expedition across Hispaniola, exploring a beautiful culture with a complex history of colonial conquest. The Dominican Republic is central to the origin story of the Americas, a rewarding travel destination steeped in history. The island’s unique multicultural blend of Taino, Spanish and African roots forms the foundation of a food culture that spread throughout the Caribbean islands. The cuisine is filled with bold flavor and soul, and it’s one of my favorites. I created this spice blend—a mix of garlic, annatto, onion, oregano, cumin, cilantro, coriander, paprika, chile powder, turmeric, orange, lemon and lime—as a tribute to my time spent soaking up those island vibes. Use it to season seafood, such as this whole fried yellowtail snapper, a pot of rice and beans, or a rich oxtail stew.

This one-of-a-kind blend is produced by Maine-based Gryffon Ridge, using organic herbs and spices, and absolutely no preservatives or fillers.
