SOUL OF THE CARIBBEAN SPICE BLEND
I recently followed the journey of Columbus’ expedition across Hispaniola, exploring a beautiful culture with a complex history of colonial conquest. I created this spice blend—a mix of garlic, annatto, onion, oregano, cumin, cilantro, coriander, paprika, chile powder, turmeric, orange, lemon and lime—as a tribute to my time spent soaking up those island vibes. Use it to season seafood, such as this whole fried yellowtail snapper, a pot of rice and beans, or a rich oxtail stew.
BAYOU BLEND SPICE MIX
From crab boils and jambalaya to gumbo and shrimp couvillion, Cajun cuisine is one of my favorites. Try boiling fresh crabs with potatoes, onions, jalapeños, kielbasa and a scoop of this Bayou Blend—a mix of mustard seed, clove, allspice, chile flakes, coriander seed, dill seed, bay leaf and ginger. Make a big batch and share with your neighbors, that’s what Cajun hospitality is all about.

KENTUCKY TABLE SPICE BLEND
Inspired by my experience exploring Appalachia, I developed this Kentucky Table spice blend, a mix of fennel, rosemary, paprika, coriander, pepper, allspice, thyme, sage, salt and chiles. Bold flavors to rival Boone's fearless pioneer spirit. You don’t need technology to create a good meal—a little seasoning and an open fire will work wonders.

Inspired by the iconic cowboy culture of the Chisholm trail, we developed Cattle Drive Gusto, a blend of garlic, onion, coriander, coffee, rosemary, thyme, sage and paprika—bold flavors ideally suited for cooking over an open fire.
DOWN THE MISSISSIPPI SPICE BLEND
From freshly caught buffalo fish to wood ducks and mallards, the Mississippi has plenty to offer to those who live on its banks. I developed this blend of pepper, ginger, celery seed, mustard seed, paprika, cassia, bay leaf, cardamom, cloves and mace as the perfect seasoning for a fresh water shore lunch.
