Produced in Oakland, California by a small group of passionate pasta-makers, this small-batch pasta is made with American-grown organic durum wheat semolina milled with a high extraction rate for a better texture. They also use traditional Italian techniques, such as kneading the dough gently with cold water and drying “low and slow,” to give the semolina a deeper and more complex flavor. This is one of the only places you can buy this awesome product.
