Chef Elliott Moss does Carolina-style barbecue his own way, smoking pasture-raised whole hogs over hardwood coals at his popular Asheville restaurant. Eighteen-plus hours in the smoker and a good dousing of homemade vinegar mop, and you’re left with the best expression of the pig you can get. Filming at places like Buxton Hall reminds me of how much I love my job.
