One of the best developments in the food world over the past 20 years is the resurrection of Old World vegetable and grain varietals. Carolina Gold Rice was introduced in the United States in the 17th century, but fell out of favor when rice became commoditized (think Uncle Ben’s). I’m happy to see companies like Carolina Plantation once again planting their fields with grains that have an aroma, taste and texture of centuries-old rice farms. Popularized by chefs like Sean Brock, Carolina Gold Rice is now one of the hottest ingredients on the market today. Steam it, stir in a tablespoon of quality butter and a couple pinches of salt, and you’ll get a taste of how rice was meant to be eaten.
