Carolina Plantation CowPeas
One of the best developments in the food world over the past 20 years is the resurrection of Old World vegetable and grain varietals like cowpeas. Known as a “champion of the Southern dinner table,” cowpeas were originally brought over from Africa and were a common crop in the Southeast, until they fell out of favor when beans and grains became commoditized. Grown by Carolina Plantation in South Carolina, these red cowpeas are fantastic. They have incredible texture without the hard skin found on most beans.
