Traditional Goat's Milk Caramel
I love caramel sauce (I mean, who doesn’t?), but it’s tricky to make and there are very few reliable prepared versions available at the supermarket. Located in Vermont, Fat Toad Farms produces delicious small-batch caramel based on classic Mexican cajeta, hand-stirred in traditional copper kettles over the course of five hours. The goat’s milk caramel is rich and creamy with a slightly tart edge. If you can avoid eating it straight out of the jar by the spoonful, pair it with cheese, fresh fruit, ice cream or put a drizzle in your coffee.
