Big Earl's Black Tea

Located in Louisville, Kentucky, Hillbilly Tea offers a full range of Appalachian-themed whole leaf teas, from smoky black teas to herbal blends. Made of Ceylon black tea, Assam black tea, Darjeeling black tea and bergamot oil, Big Earl is their version of earl grey, only stronger with a healthy dose of caffeine. To brew it, pour boiling water over 2 tablespoons of leaves and steep for 3 to 4 minutes. Or get creative and use it to braise lamb shanks with this recipe:

Big Earl’s braised lamb shanks with succotash

  • 2 large lamb foreshanks

  • 2 cups white beans, either canned or partially cooked

  • 2 cups brown or black beans, either canned or partially cooked
  • 4 roma tomatoes, diced

  • 4 cloves of garlic, minced

  • 2 tablespoons of salt

  • 1 teaspoon black pepper

  • 1⁄2 cup big Earl’s hillbilly tea
  • 1 quart chicken stock

Preheat your oven to 350 degrees F. Heat some olive oil over medium-high heat, add the lamb shanks and sear until golden brown on each side, about 2-3 minutes per side. Once browned, remove them from the pan and set aside. In a casserole dish put the remaining ingredients. Lay the lamb shanks on top, and sink them down into the beans until they are 2⁄3 of the way submerged. Braise, uncovered, for 4 hours, until the lamb is falling off the bone. Serve family style with some corn pone, or crusty bread!
