Les Moulins Hand Rolled Couscous
A family-owned cooperative of 12 brothers and sisters, Les Moulins Mahjoub specializes in artisan Tunisian foods. Hand-rolled and sun-dried in the Mejerda Valley, I’m obsessed with their traditional M’hamsa-style couscous. The difference between hand-rolled couscous and its machine-expelled counterpart is the difference between a Yugo and a Rolls-Royce. It looks better, tastes better, toasts better and cooks better. Use it as the base for a simple Mediterranean salad, with this amazing braised chicken with black limes, or alongside a traditional North African tagine with harissa and preserved lemon.
