Carolina-style whole hog barbecue is one of my top 10 desert island foods, and the no-frills barbecue at Skylight Inn is pure perfection. Known to the locals as Pete Jones’ BBQ, this spot has been cooking whole hogs over wood since 1947. Although Pete passed away in 2006, his legacy is still going strong. Skylight Inn is now operated by Pete’s son Bruce, nephew Jeff, and grandson Sam Jones who continue to carry on the tradition. Sam Jones Sweet Heat barbecue sauce is a classic Eastern North Carolina vinegar sauce with a touch of sweetness and hint of heat. Use it to dress pork or chicken, or try it with my low-and-slow barbecued pulled pork.
